Birthday Cupcakes

Yep. It’s true. Cat’s outta the bag. It’s my birthday today so I decided to share one of my favorite sweet treats as a way of celebrating—good old vanilla cupcakes. Since I’m all about minimizing kitchen time, I opted for store bought cupcake mix but added white chocolate chips to it and made my own frosting (see my favorite recipe below). And since I had fresh strawberries from the farmers market in the fridge, I sliced a few up for a colorful topper. While I’m a lover of most anything involved with frosting, there’s just something about cupcakes that makes me giddy. What’s your favorite treat to have on your birthday?
Vanilla Frosting Recipe
1/3 cup unsalted butter softened
3 cups powdered sugar
2 teaspoons vanilla extract
add milk or cream to consistency you like
*For chocolate frosting just add powdered cocoa to the mix and half the vanilla
